Life Changing Roasted Red Bell Peppers
Eat your veggies…
If you saw my last blog post, What You Need For Spring, you know I’m all about the veggies this spring. Not the gross veggies that your mama makes you eat, but the ones that taste good and, of course, are easy to make. Whether you’re new to veggies or a veggie veteran, you have to try this recipe. It’s the side dish you never knew you needed.
Ingredients:
1 red bell pepper
Olive oil
Salt
Pepper
Goya Adobo
Juice of 1/2 of a lemon
Instructions:
Preheat oven to 400 degrees. Cut red pepper into slices. Line slices on roasting pan. Drizzle or spray peppers with olive oil. Sprinkle, salt, pepper, and adobo onto peppers. Place into oven and roast for 20 minutes. When peppers are done, squeeze the juice of the lemon onto the peppers. Enjoy!
