Emily and Zack Greinke's Go To Meal - Chicken Pot Pie
Step inside the Greinke’s kitchen…
Emily and Zack have a beautiful home and luckily I got to try their go to meal- a Chicken Pot Pie made from scratch. I definitely thought this recipe was going to be more difficult, but Emily assured me that it was easy. Now we’re sharing it with you! Set your oven and let’s get this pot pie cooking! Huge thank you to Emily for having me in her home and sharing this DELICIOUS meal with us! Enjoy!
Ingredients:
10oz frozen peas and carrots
1/3 cup butter
1/3 cup all purpose flour
1/3 cup chopped onion
1/2 tsp salt
1/4 tsp pepper
1 3/4 cups chicken broth
2/3 cup milk
2 1/2 to 3 cups cut up cooked chicken
Pastry for Two-Crust Pie
Instructions:
Heat oven to 425 degrees.
Rinse frozen vegetables in cold water; drain. In 2-quart saucepan, melt butter over medium heat. Stir in onion, salt, pepper, and flour, stirring constantly, until mixture is bubbly. Slowly stir in broth and milk. Heat until boiling while stirring constantly until creamy. Stir in chicken and vegetables. Remove from heat.
Roll pastry into your ungreased pie dish. Pour filling into dish. Roll the second pastry on top of pie dish filling. Turn edges of pastry under and mold together. Make small cuts in the middle to allow the dish to breathe during baking.
Bake for 35 minutes or until golden brown.
