Mini Apple & Pear Pies

What I’m bringing to Thanksgiving…

these delicious personal pies! I am not one to pick fruit pies as my dessert of choice. However, these bad boys are definitely a favorite. They are different than any fruit pie I’ve ever tried. Maybe it was the labor of love and seeing it come together that made me love them, but either way, they are a definite must bring to Thanksgiving! I pulled this recipe from Lauren Conrad and it was too good not to share!

ingredients:

Puff Pastry dough- I love this one!

2 granny smith apples

1 pear

2 tablespoons sugar

2 tablespoons brown sugar

½ teaspoon cinnamon

a pinch of nutmeg

a pinch of salt

cooking spray

mini tartlet pans

2 ½ inch circle cookie cutter- I went with an apple

Instructions:

Preheat your over to 375 degrees.

Peel, core, and dice your apples and pear and place in a big bowl. Add the sugars and spices. Mix together, making sure every piece of fruit is covered in sugar. Set the mixture aside for 10 minutes to let the juices start to form. You will notice a little sugar pool at the bottom of your bowl and that’s okay.

While the fruit rests, roll out your dough on a lightly floured surface. Next, spray your muffin tin with cooking spray and set aside until ready to use. You can cut out measured circles based on the tin you have or you can place the dough into a muffin cavity. Press the dough lightly down and up the sides so that the crust is stuck to the inside of the pan, then tear off the excess dough.

Add the fruit to your pies, fill them to the top, as you want each pie to be completely filled.

Top each mini pie with a crust option of your choice! Remember, if you place a crust over the entire pie, make sure to make a slit on the top to let steam out.

Bake the pies for 35 to 40 minutes, or until you can see the juices bubbling under the crust. Let cool for at least 20 minutes before serving. Enjoy!

Whipped Cream

ingredients

1 cup of heavy whipping cream

2 tablespoons of sugar

instructions

Whisk the heavy whipping until you start to see small peaks. Then slowly add in the sugar while continuously whisking, until well combined. Top your pies with whipped cream after cooling. Serve and enjoy!
