Super Easy, Healthy, & Delicious Miso Chicken Bowl
It’s lunch time…
This miso chicken bowl is so incredibly easy and delicious! It will fill you up and leave you feeling good because it’s light and healthy. I can’t say much more without my mouth watering, so let’s get to the details of this bowl.
Ingredients:
1 lb boneless skinless chicken thighs
1/4 cup white miso
1/4 cup coconut aminos, plus extra for dipping
avocado oil
1 zucchini, diced
1 avocado
1 shallot, diced
1 cup brown rice
sesame seeds
Instructions:
Whisk white miso and amino acids together. Marinate chicken thighs in the miso/amino acid mixture for 24 hours in the fridge covered.
Cook brown rice. I have found the best way to cook brown rice in an instant pot. Put 1 cup of brown rice and 1 cup of cold water into the Instant Pot. Cook on high ‘Pressure Cook’ for 15 minutes. Let naturally release for 5 minutes and then quick release. Take off the lid and voila!
While the rice is cooking, heat your cast iron grill. Spray with avocado oil. Before cooking, dab off some sauce from the chicken. Cook chicken for 5 minutes on each side. After letting rest for 5 minutes, slice chicken.
While chicken is cooking, you can begin to cook your zucchini low in a pan with either avocado or olive oil. After a few minutes, add shallots. At the last minute of cooking, add the sesame seeds so they’re lightly toasted.
In your bowl, add rice. Then add sliced chicken, zucchini + shallot mixture, and avocado. Pour a side of coconut amino acids for dipping or just pour right on like I do (ha! SO good!), and enjoy!
