Amy & Gerrit Cole Share Their Go To Meal

After a quick fishing trip...

Amy Cole, wife of Houston Astro’s pitcher Gerrit Cole and sister of SF Giants Short Stop Brandon Crawford, brings over her freshly caught salmon and we get to cooking! As Gerrit did a lot of the cooking in their young dating age, Amy learned a lot of her cooking skills from him. So we put her to the test! Amy whips up their go-to meal- Dijon Mustard Salmon. This was seriously such a fast and tasty meal, I'm still amazed. Give it a try, you won't be disappointed.

INGREDIENTS: 

2- 1/2 lb salmon filets
Dijon mustard
Thyme (roughly chopped)
Rosemary (roughly chopped)
1 bulb garlic (roughly chopped)
Olive oil
Salt & pepper
Pancetta (cubed) even though Amy refers to the meat as prosciutto
1 Lemon wedge
Spinach

INSTRUCTIONS:

First, preheat oven to 400. 

Using a cast iron skillet, heat olive oil. Once heated, add salmon filets, skin side up on high heat for a good sear. About 3 minutes. Then flip salmon. Next, add about 2 tbps dijon mustard to the top of the fish, spread evenly. Add rough chopped garlic, thyme, and rosemary. Put skillet in the oven for 5 minutes.

Meanwhile, sauté the pancetta for a few minutes. Add garlic and let that cook. Then add spinach until sautéd to your liking. Add lemon squeeze and pepper to your spinach. Enjoy!
