Super Easy Coconut Crusted Chicken

are some of my favorite go-to meals, especially during the summer. When I made this coconut crusted chicken, I knew I would put it into my rotation. It's easy, it's tasty, and it's healthy. I honestly can't get enough of this dish.
Ingredients:
1/2 cup shredded coconut
2 tsp sea salt
1/4 cup unsweetened coconut milk
2 chicken breasts
2 tbsp coconut oil
2 lime wedges
Instructions:
Preheat oven to 350 degrees. Combine coconut shreds and salt in a bowl. Mix well. Pour coconut milk into a separate bowl. One by one, dip each chicken breast into the coconut milk, coating it evenly. Shake off any excess. Then dip the wet breast into the coconut-salt mixture. Press the coating onto the chicken evenly.
Heat a large skillet (ovenproof). Add coconut oil. When the oil is hot, add the chicken breasts. Cook the breasts for 2-3 minutes or until lightly browned on one side. Then flip to the other side and move skillet into the oven for another 5 minutes. Remove chicken from oven and squeeze lime. Enjoy!
